Built in kitchens. Proven in business.
Knife & Compass is a hospitality consultancy for the businesses that feed and define a culture — the rooms people return to, the menus they remember, the counters a neighborhood is built around.
We came up in kitchens and dining rooms, not boardrooms. With more than 20 years in hospitality, Knife & Compass brings together culinary expertise and operational leadership — managing teams, budgets, menus and multi-unit businesses.
We don't hand you a binder and disappear. We work beside you until the menu sells, the line runs clean, and you can read your own numbers without us in the room.

Before you ask…
The Questions We Hear Most
Who do you work with?
Independent operators — single rooms and small groups. Restaurants, cafés, bars, bakeries, and food halls that want to grow without handing over their identity.
How does an engagement start?
With a consult, not a contract. We spend 30 minutes on your room, your menu, and your numbers, then tell you honestly where the leverage is. If it's a fit, we scope the work from there.
Do you only fix menus?
No. Menu, operations, and financials move together — we'll start where the pain is loudest, but we look at all three. A menu that sells means nothing if the line can't repeat it or the math doesn't work.
Will you run my restaurant for me?
We work beside you, not instead of you. The goal is to leave you with systems your team can run and numbers you can read on your own — not a dependency on us.
How long does it take?
It depends on the room and the goal. Most engagements run a season; the financial clarity work is built to keep paying off long after we've gone.
Do you take equity or commissions on sourcing?
No. We're paid by you, for you — no kickbacks from suppliers, no hidden incentives. Our only job is to make your business stronger.
I'm not sure what I need yet. Is that okay?
Completely. Most owners feel something's off before they can name it. That's what the first conversation is for.
